CROSSOM MORITA has developed a new brand of beef called "Moritana Beef," which has been featured in the Michelin Bib Gourmands.
In the rearing process, they generously incorporate feed mixed with sake lees from sake breweries and increase exercise by allowing the cattle to graze freely.
This method enhances the rich flavor and texture of the meat.
Furthermore, we employ a technique called "Japanese Sake Ginjo Aging Beef" (patented trademark) for meat aging.
By using our unique special sake yeast, we achieve aged beef that is tender and packed with an unimaginable depth of flavor, even without additional seasonings.
